One of my hobbies is programming pic microcontrollers and below is a pic of my simmstick proto setup. The power board on the left I made myself and it has a 5 volt regulator, a LM317 voltage regulator and RS232 using a 3 pin stereo plug.

The simmstick is designed around a 30 pin common bus which is very handy for pic projects. They have been around for years and Dontronic's have heavily discounted the simmstick products so now more than ever they are good value for pic projects. The board I'm using in the photo is a 28/40 pin DT106 which has a max232, 24aa1025 eeprom and a 16f876a with a bootloader installed. The bootloader is handy as I only need the RS 232 to program the pic and with the LCD onboard it make for a nice compact unit. So when I've got the program all debugged and working properly all I need to provide is the power and the simmstick can go about it's work remotely. Then when I want to download the data I just throw it back into the proto setup and download the data to the laptop.
